ARTISAN ROSOLIO

LEMON

PRODUCTION

The peeling of the lemons is a decisive phase of the first preparation, in which, by discarding the fruit and albedo, the white spongy part, only the external part of the peel is obtained for use, which gives the limoncello its unique and decisive aroma and character. The skins are then the protagonists of the maceration in alcohol, which takes place at room temperature in a cool and dark place (light and heat alter the active ingredients, compromising the flavor of the lemons) and lasts for about 15 days until maturation.
